Getting Two Birds Stoned at Once Pizza.

I know I have used that expression in a title before, but it’s one of my favorites. I will probably use it again. It’s from the Trailer Park Boys, probably one of the funniest shows in the history of the world. Can I get a What! What! Canadians are hilarious. You don’t believe me? Two words for you: John Candy. Seriously. Uncle Buck? Comedy genius.  Anyway, this blog isn’t about comedy, or even movies, it’s about delicious pizza!
    So, last winter I went to beautiful, sunny San Diego. It was hands down, the best city I’ve ever been in. Warm, clean, friendly! I loved it. One day my BFF came down to visit from LA. We walked all over the Gas Lamp District and had lunch at Sammy’s California Woodfired Pizza. (Look this story is going somewhere, I promise). We split one of their organic arugula, pear, and Gorgonzola  pizzas. I just looked it up on their menu, it cost about $11.00, which actually isn’t bad for a fancy pizza split between two people, but you can totally make it for less. You guys, this pizza was frackin’ amazing. We were super hungry from walking around all morning and devoured it in a very unladylike fashion, and it was perfect. Filling, yet light. I have been thinking about this pizza for MONTHS. How did they do it? How did they get the Gorgonzola all melty and good and even? I thought it was some sort of super hard trick. But then, my friend who shared the pizza figured it out, because she too has a penchant for tasty pizza. It’s SO easy! I must share my version with you.

    Getting Two Birds Stoned at Once Pizza. (or, Salad Pizza for you literal folks)

This pizza is perfect. You get to indulge a pizza craving but, it’s good for you,  hence – Getting Two Birds Stoned at Once. My amounts are basically non-existent in this recipe. It depends on how big your crust is, and how much you like stuff; you might be feeling wild and want a whole ton of cheese on there. Go for it! This is more of a technique than anything. I want you to see how easy it is. I Also, I apologize for the craptastic photos. I took them with my phone.


1 blob of dough. (For my recipe I bought it at Hannaford, but you should totally make your own. I know I will next time. It can’t be beat)
Blue Cheese (I had some killer stuff from the farmers’ market. Knock your socks off $6.00 for a tiny slice, cheese. Oh mama, it was worth it.I also only used about 1/4 of it.So, still pretty cheap.)
An apple – peeled and thinly sliced. (You can also use a pear, but I didn’t have one)
Mixed Greens (Use whatever you have. I recommend something with a little bite, like arugula, but it’s your pizza. If you hate arugula skip it.)
Balsamic Vinegar
Olive Oil
S&P

Ok so what you do is, get your pizza dough all flattened out. Oh shit, did you pre-heat your oven? Sorry. Do that first. Fire that bitch up to 400. Ok, now, flatten your dough all out. If you haven’t made your own pizza before, now is probably a good time to tell you to put corn meal all over your pizza stone or pan. Otherwise it’s going to stick, and you’re going to be pissed off. I’ve learned this the hard way.

Now, cover your pizza with the blue cheese and then lay the apple slices on top of the cheese. Stick it in the oven and cook it until the sides are nice and brown, the cheese is melted, and the apples are a bit golden. In other words, you just cook it like a regular pizza! See how easy? The picture on the right shows what it looks like when it’s done.

Here comes the salad part. Did you wash and dry your greens? Do it. Are they nice and dry? Good. Now cover the whole top of your pizza with salad greens. Drizzle with Balsamic Vinegar and Olive Oil. Not too much! Then slice it like a regular pizza and enjoy!   I haven’t done the calorie count, but I’m willing to bet it’s far less than a slice of cheese pizza, definitely less than pepperoni. Anyhow, give it a shot!

    * 1 teaspoon sugar
    * 1 cup warm water
    * 1 tablespoon kosher salt
    * Extra-virgin olive oil
    * 3 cups 00 flour, plus more for dusting
    will make 3 12 inch pizzas

  2. That looks really good! I really need to get my butt in gear and freeze some dough so I always have it on hand.
