Best Salmon Recipe in the World.

This is my favorite salmon recipe ever. It’s from The New Basics Cookbook by Shelia Lukins and Julee Russo. They are the ladies that wrote The Silver Palate series of cookbooks. You should buy them. I use them over and over, and are a staple in my kitchen. Anyway, here are the deets:

Salmon with Potato Fans (or just a pile of potatoes, if you’re me)
1 Tbspn unsalted butter room temp (or nuked for about 10 secs.)
1 Yukon Gold potato peeled – (or whatever you have, sliced SUPER thin – if you have a mandolin, use it.)
4 Teaspoons minced shallots (but I use about twice that much)
2 5 oz Salmon Fillets, (or whatever you have, I usually just do one big one, about 1lb.)
 Salt and Pepper

Preheat oven to 350
Ok, now take the butter, and smear it allll over a rad, cast iron skillet. You do have one right? You don’t? Go get one, right now. I mean it. For the rest of you that have rad, cast iron skillets, lay the potatoes in the bottom of the pan until it’s completely covered, there will be some overlapping. Sprinkle potatoes with salt, pepper and shallots.

Now, season the salmon with salt and pepper and put it skin side up on top of the potatoes.

Cook over medium heat for 5 minutes, then put it in the oven and cook until the salmon is done and the potatoes are golden. Anywhere from 10-15 mins, just keep checking it.

The cookbook tells you to lift everything out of the pan all carefully and flip it over so that on the plate the potatoes are on top but really, I can’t be bothered. Just make sure that you give each person enough potatoes to enjoy some with each bite of fish. This recipe is so freaking easy and delicious. It’s really going to knock your socks off.
